What’s the most famous pincho in Spain? Probably tortilla de patata (Spanish potato omelette). You can find this in basically every bar and it’s a staple in the Spanish diet. For example, when some of my preschool students play house, they flip tortillas in their plastic frying pans. To put it mildly, I am obsessed with this dish. I eat it for breakfast, lunch and dinner, and if several days go by and I haven’t had a slice of tortilla, I go into a mild panic and head to my favorite tortilla bar, Porto Vecchio. If I have time, I even make them on the weekends, though flipping the perfect tortilla still eludes me. I posted a recipe last year for making tortilla de patata, if you are feeling adventurous in the kitchen. They are actually not that difficult to make.
